Spaghetti with zucchini and clams

Lately I am on a “simple meals” kick, I just don’t feel like eating elaborated and possibly fatty food. I think it might be the spring coming (even if here it is still in the 30s), but I feel more and more like simple dishes with just a few light ingredients. So Yesterday I cooked this pasta with just zucchini and clams. And that was my dinner.

Spaghetti with zucchini and clams

Prep Time: 10 minutes

Cook Time: 20 minutes

Yield: 2-3 Servings


  • 1/2 lb whole wheat spaghetti (but you can use any sort of long pasta: spaghetti, linguine, fetuccine..)
  • 3 zucchini
  • 1 can clams
  • salt
  • pepper
  • EVOO
  • parsley


  1. First I prepared the water for the pasta and put the pot on the stove to warm up. Then, in a pan I warmed up the oil and once the oil was warm I added in the thinly sliced zucchini. I like my zucchini well cooked and i like some of them to be slightly burned and the trick to do that is not to move the zucchini to much. Just mix them once every 2-3 minutes and you will have some nice soft zucchini with some more roasted sliced mixed in. After about 5 minutes of cooking I added a bit of salt and pepper to season the zucchini and a bit of the clam juice to help the zucchini finish cooking. Meanwhile, the water came to a boil. I salted it and cooked the spaghetti according to the package instructions.While the spaghetti were cooking, I added the clams with their leftover liquid to the zucchini and cooked for about 5 minutes. Pasta was now ready to be drained. After draining pasta, I added it to the zucchini sauce and sauteed it briefly (about 1 minute) to allow pasta to absorb some of the juices from the sauce. At the very end I sprinkled everything with parsley.
  2. Whenever you are sauteeing pasta after draining it (which should be almost always), you want to drain your pasta when is still "al dente" and has some bite to it, otherwise it will be overcooked by the time you bring it to the table.
  3. BF is not a big fan of clams, but liked the pasta anyway. Success!

    As an Italian cook I think something is missing. Where is the slightly browned minced garlic always found in spahgetti and clams? That combo is a must and the addition of thin sliced zucchini sounds like a wonderful addition.

    Will give it a try soon.

      I’m from north Italy and garlic there is not that popular. Even when we use it, we almost always use it in whole cloves so that the flavor is more subtle.
