Cucumber salad

Today I am choosing a simpler than simple recipe. However, simple things sometimes are the best! And cucumber salad is great. So simple yet so delicious!

To get the best flavor out of this salad, you should let it rest for a couple of hours so that the cucumbers release their water and get marinated in the vinegar, however if you are in a hurry 30 minutes will do the trick.

Cucumber salad

Prep Time: 10 minutes

Total Time: 40 minutes

Yield: 4 Servings

Cucumber salad


  • 1 large cucumber
  • 1/2 red onion
  • 1/4 cup white vinegar
  • 1/2 tbsp sugar
  • 1 pinch salt
  • chive


  1. Slice the cucumber and the onion as thinly as possible.
  2. Add the vinegar, the sugar, the salt and the chive and mix well.
  3. Let rest for 30 minutes or more in the fridge and serve.

    Mother always served cucumbers, vinegar, onions & salt when they were available from our garden. Mother was Pennsylvania Dutch Heritage.

    One of my favorite salads and it makes me think of summer! I’ve even cheated before and used splenda rather than sugar, and no one knows the difference!
