So I moved and started my new job about 2 weeks ago, tomorrow I am starting to teach 3 classes, in the last week one of my coauthors has asked me to work on 2 projects and another one asked me to work on a 3rd and I am pretty much the bottleneck on 2 these projects. Last week I worked pretty much 11 hours a day and had very unhealthy eating habits. Today, Labor Day, I get an email asking me about a fourth project… I wonder why I have been having migraines pretty much every other day…
So instead of stressing out even more, I decided I am going to take my time today and I prepared a nice easy and light brunch to make up for some of those unhealthy eating habits. And so watermelon salad was born.
So watermelon is one of my favorite fruits. I am known for eating so much watermelon that I get sick. I also can have dinner or lunch on watermelon alone. But recently I discovered watermelon salad.
It was love at first bite. I love adding a bit of salt to watermelon. Especially if the watermelon in question is a bit water and under-ripe. In the past week I had versions of this salad as breakfast, dinner and side. Today I used it as brunch.
