Insalata di Cocomero

So I moved and started my new job about 2 weeks ago, tomorrow I am starting to teach 3 classes, in the last week one of my coauthors has asked me to work on 2 projects and another one asked me to work on a 3rd and I am pretty much the bottleneck on 2 these projects. Last week I worked pretty much 11 hours a day and had very unhealthy eating habits. Today, Labor Day, I get an email asking me about a fourth project… I wonder why I have been having migraines pretty much every other day…

So instead of stressing out even more, I decided I am going to take my time today and I prepared a nice easy and light brunch to make up for some of those unhealthy eating habits. And so watermelon salad was born.

Watermelon Salad

So watermelon is one of my favorite fruits. I am known for eating so much watermelon that I get sick. I also can have dinner or lunch on watermelon alone. But recently I discovered watermelon salad.

It was love at first bite. I love adding a bit of salt to watermelon. Especially if the watermelon in question is a bit water and under-ripe. In the past week I had versions of this salad as breakfast, dinner and side. Today I used it as brunch.

Insalata di Cocomero

Prep Time: 10 minutes

Yield: 1-2 Servings


  • 2 slices watermelon
  • 1/4 cup crumbled ricotta salata
  • 15 olive cured black olives
  • 2 sprigs mint
  • salt to taste


  1. Dice the watermelon and put in a bowl.
  2. Sprinkle with the salt, crumbled ricotta, olives and mint leaves.
  3. Mix well and let rest 10-20 minutes to let the flavors come together.
  4. Enjoy as a side to grilled meat or as light lunch or as a great breakfast!

  1. Whoah, sounds like life has gotten super busy over there! Don’t over do it. I agree, I love watermelon, especially with feta and olives. I like the ricotta salata idea, must try that.

    Case in point, Pola – I don’t know how you juggle it all! That salad looks fantastic. We have lots of watermelon here – I’ll have to try this.
