#SRC: Stuffed jalapenos

So today is SRC again. And this month I was assigned to the life and loves of Grumpy’s Honeybunch. Grumpy’s Honeybunch is Shelby and she started the blog to leave a written record of who she is and what she does to her children and potential grand children. Along the way she is also providing all of us with amazing recipes.

I knew starting out that I wanted to do something with Jalapenos if at all possible: I have a bunch of them still on the plant on my balcony and winter is coming! So I started digging around Shelby’s blog.

Stuffed Jalapenos

And I found the perfect recipe! Mushroom and sausage stuffed jalapenos! Shelby used fresh mushrooms, while I used dried and I changed cream cheese to sour cream, but I left most of the recipe unchanged. And it was a wise choice: they turned out delicious! Just enough of a kick to make them interesting and plenty of deliciousness!

I brought them to a party and they did not last long!

#SRC: stuffed jalapeno

Ingredients

  • 15 jalapenos
  • 2 brats
  • 1/2 cup dried mushrooms
  • 1/2 onion
  • 1/4 cup shredded cheese
  • 1/4 cup sour cream

Directions

  1. Soak the mushrooms in 1 cup water.
  2. Cut the jalapeno in half and seed them.
  3. Take the casing off the brats, crumble them and cook them in a hot pan. Once the sausage is cooked through, put aside and wipe the pan clean.
  4. In the same pan cook the onion and the soaked mushrooms until the onion is caramelized.
  5. Add the brats back to the onion and brat mixture and let cool down.
  6. Add the cheese and the sour cream to the brat mixture and mix well.
  7. Use the mixture to stuff the jalapeno. Arrange the jalapeno in a pan and cook in a 375 oven for 40 minutes or until you smell deliciousness and the jalapeno are wilted.
  8. Serve hot.
