An idiosyncratic, incomplete and evolving list of things I think I should make to achieve culinary perfection or its thereabouts:

  1. Baccala’
  2. Curry from scratch
  3. Perfectly poaching an egg – easy in theory but never works for me
  4. Perfectly stiff meringue
  5. Panettone
  6. Limoncello
  7. Chocolate candies
  8. Mostarda
  9. Puff pastry
  10. Layer cake
  11. Canning
  12. Temper chocolate


  1. Deboning and butchering birds
  2. Curing fish
  3. Hollandaise, Zabaglione, Mayonnaise, Ganache, Bechamel and a lot of other sauces sweet of savory
  4. Bread
  5. Pizza
  6. Cheese – Ricotta and Primo sale
  7. Butternut squash ravioli
  8. Pie crust
